The Mortadella of Antica Larderia Mafalda is made with the same recipe as the Mortadella di Prato PGI and stands out for the high quality of the pork meat used (only the shoulder) and the addition of our Lard. It is therefore not the classic mortadella from Bologna but it is the particular and highly appreciated MORTADELLA DI PRATO PGI which comes from a medieval recipe.
History: the first certain documents on Mortadella di Prato as an original product of the Tuscan city date back to 1733, on the occasion of the beatification of Sister Caterina de' Ricci, when the nuns of the Dominican monasteries of Prato prepared for the guests a lunch where it appears as a local specialty. Mortadella di Prato was born from the need to make the best use of the meat discarded in the preparation of salami, stuffing it into sausages after having flavored it with spices and liqueurs and cooked it in water.The product, of medieval origin, is characterized by the original presence of alchermes, a purple-coloured liqueur once obtained from cochineal, the famous "dyer's grain", used as a colorant and flavoring and with an abundant spiciness, useful for preserving the product.
Our Mortadella: a very fine mixture of lean Italian pork and fine lardons from our Lardo, incorporated as cubes, mixed, stuffed into suitable casings, flavored with salt, black pepper and spices.
Appearance and flavor: like Mortadella di Prato PGI, it has a cylindrical or elliptical shape. When cut it has a firm and compact consistency, soft on the palate. The color is brighter pink due to the coloring presence of the alchermes, with white spots due to the fat cubes. The aroma is penetrating and spicy, while the flavor is balanced between the contrast of the warm note of our Lard and the pungent note of spices, garlic and sea salt with the sweet and delicate note of alchermes.
