Our Lardo matured in marble basins for at least 6 months, with the addition of chilli pepper. The upper part is covered with a thickness of sea salt, orange in appearance due to the chili pepper and spices in which it is soaked. The thickness of the piece varies from 4 to 8 cm.
Curiosity: A study published in the Journal of the American College of Cardiology and coordinated by the epidemiologists of the IRCCS Neuromed of Pozzilli, in collaboration with the Istituto Superiore di Sanità, the University of Insubria in Varese and the Cardiocentro Mediterraneo of Naples, has found that using chili pepper 4 or more times a week is associated with a 23% reduction in the overall risk of death, a 40% reduction in the risk of death from a heart attack, and a reduction of more than half in the risk of stroke.
